Puff Pastry with Tofu

If you love stuffed savory puff pastry, you’ll adore this recipe. This is a vegan equivalent of the traditional Venezuelan ‘pastelitos’ (little pastries), which are usually stuffed with ricotta cheese and spinach!

Our vegan equivalent uses tofu and packs lots of flavor into these crispy little packages. We also use store-bought puff pastry, though you can make your own if you wish.

We’ve also included some recipe variations (in the FAQs below) if you want spicy pastries. Enjoy!

Ingredients

  • 4 cups fresh spinach (baby spinach is best)
  • 1 ten-ounce packet of tofu (extra firm)
  • 1 shallot, finely diced
  • 2 garlic cloves, peeled and minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 3 tablespoons nutritional yeast
  • 2 tablespoons tahini (sesame seed paste)
  • 2 sheets store-bought or homemade puff pastry (about 18 ounces, or 500 grams)

Method

  1. First, remove the tofu from the package and press out any excess water. You can do this in about 5 minutes with a TofuBud style tofu press. Alternatively, wrap your tofu block in a clean towel, and put it in a colander. Put a weight on top and press out the water. Leave the weight on top of the tofu for another 20 minutes or so.
  2. While your tofu is draining, steam the fresh spinach for 5 minutes or till it wilts. Put the spinach in a colander or sieve and let it drain.
  3. Leave the spinach to one side, and preheat your oven to 425 degrees F.
  4. Now crumble your tofu (using your hands) into a mixing bowl, and add the rest of the ingredients except for the puff pastry sheets. Mix well.
  5. Your spinach should now be cool enough for you to squeeze out as much water as you can. Once you’ve drained your spinach, chop it and add it to the mixing bowl. Stir it into the tofu mixture.
  6. You are now ready to fill the puff pastry sheets. Set the pastry sheets out on top of parchment paper. You want your sheets to be nice and thin – if you find they are too thick, roll them out with a rolling pin. The thickness of the pastry depends on your personal taste, but generally speaking, you want the pastry to be as thin as possible without breaking.
  7. Trim the edges of your puff pastry sheets so that you have a square. Next, cut diagonally across the square so that you have two triangles. If you like large puff pastries, two triangles per pastry sheet are fine. Otherwise, you can cut your square across the other diagonal so that you end up with four triangles or four small puff pastries.
  8. Using a spoon, put some filling in the center of each triangle. Fold the triangle over on itself to cover the filling (as if you wanted to fold it to make another triangle). Press the edges of the pastry together so that they form a tight seal. Repeat this process until you’ve made all of your pastry puffs.
  9. With a small knife, cut some slits diagonally across the top of each puff. The slits will allow steam to escape as they cook. Put your puffs on a baking sheet lined with parchment paper. The parchment paper will keep the pastries from sticking. If you don’t have parchment paper, use a non-stick spray or aluminum foil underneath.
  10. Cover your puffs with foil, and bake them for 20 minutes.
  11. Remove the foil and let them bake for another 5 or 10 minutes, or till the tops of your puffs are slightly golden brown. Serve hot.

Note: If you happen to have any leftover filling, keep it for sandwiches or to serve on toast.

Puff Pastry with Tofu FAQs

What else could I add to the filling to get different flavors?

  • There are many other ingredients you could add to the filling to spice things up a bit. This recipe is essentially a tofu scramble inside a pastry, so any scramble ingredients would work well.
  • This recipe would work well with any additional veggies that you fancy, such as mushrooms, chopped sweet peppers, corn… anything goes!
  • For an Indian-inspired pastry filling, you could add 1/2 cup green peas along with a teaspoon of your favorite curry powder.
  • For a Mexican-inspired filling, try 2 teaspoons chopped jalapeno peppers, 1 medium tomato finely diced, a few sprigs of fresh cilantro, and 2 teaspoons taco seasoning.

What can I serve with puff pastries?

These pastries are delicious when accompanied by a hearty vegetable soup, a selection of savory dips or your favorite tossed salad.

What is a beef enchilada casserole?

Imagine taking all the juicy delicious goodness of an enchilada: The enchilada sauce, the beef, the cheese, even some refried beans, and layering it all in a casserole dish, instead of rolling it up. Not only is it way easier to eat (no food ending up on the floor with this one), but it also means the sauce is going to get right into the inner machinations of the casserole. And what does that mean? An explosion of absolute Mexican heaven right in your mouth.

How to make beef enchilada casserole

All wonders of the culinary world in one place, that’s what! Basically, your beef enchilada casserole is made up of some of the best food ever known to man, including:

#1. Tortillas

You can use either flour tortillas, which are softer, or corn tortillas which will provide a more authentic experience. Remember that corn tortillas are smaller than flour tortillas so make sure to use a few more. You can even make your very own tortillas at home with this tortilla press exactly the way you like them.

#2. Red enchilada sauce

This is the best part, and like we said because this meal is made in a baking dish, the sauce gets right into the heart of the beef enchilada casserole – which we love!

#3. Ground beef

Feel free to season your ground beef, or create a beef mixture with onions. Any beef enchilada casserole is only going to taste better with onions.

#4. Cheddar cheese

What would this beef enchilada casserole be without cheese? Any kind of cheddar cheese will do. Just make sure it’s heavenly. That’s all that really matters.

This is only the start…

This is the base; the not-so-humble beginnings. Once you’ve got these ready, we dive into the actual beef enchilada casserole recipe proper. And with a cook time of anywhere between 10 minutes and 30 minutes, it’s a super meal to make for when friends get together. The prep time is also minimal. So, your total time is enough to welcome in your guests have a drink, put on a Mexican hat, and voila! Beef enchilada casserole ready to go!

Beef enchilada casserole recipe.

Ingredients:

(makes 6 servings of beef enchilada casserole)

  • 1 pound ground beef
  • 1 tsp taco seasoning
  • 1 diced onion
  • 1/4 tsp salt
  • 1 10-oz can enchilada sauce
  • 3/4 c water
  • 1/2 c medium thick and chunky salsa
  • 12 (6-inch) corn tortillas
  • 1/4 c fresh cilantro, chopped, divided
  • 1 c shredded cheese (or 2 c if you’re feeling you need more cheese than usual)
  • sour cream and lime wedges, for serving

Instructions

  1. Preheat the oven to 350ºF.
  2. Heat a large skillet over medium-high heat. Put your ground beef, taco seasoning, and salt into the skillet and cook, while stirring. Make sure you’re breaking up the beef as it cooks. You’ll know it’s done when the beef is brown and cooked through (with any excess fat drained).
  3. Now it’s time to add the enchilada sauce, water, and salsa. Bring this to the boil and stir together. After 4 to 5 mins remove from the heat (most of the liquid will have evaporated by now).
  4. Stack your corn tortillas or flour tortillas and cut them into 1-inch strips. Spread 1/4 cup of the enchilada sauce over the bottom of the dish. Now, place half of your tortilla strips at the bottom of a 9-inch-deep baking dish. Once they’re arranged, place half of the ground beef mixture over them. Now sprinkle 3/4 cup of cheese over your ground beef. Sprinkle the 2 Tbsp of chopped cilantro over the top. Pour another 1/2 cup of enchilada sauce over this. Keep repeating with the ground beef, the cheese, and the enchilada sauce until the ingredients have almost all been used up.
  5. Place the remaining flour tortillas or corn tortillas on top, adding the cheese, any remaining beef, and remaining enchilada sauce on top of the tortillas to complete your beef enchilada casserole.
  6. Cover with foil and bake in the oven for a cook time of approximately 30 minutes, or until the cheese is melts and starts bubbling. You can sprinkle any leftover cilantro over the top before serving. The best part is serving it with sour cream and lime wedges.

How to Pair Wine with Organic Foods

The organic revolution, as it is known amongst foodie circles, is in full swing. Through media exposure and access to the internet, we have discovered just how terrible some of the chemicals used in our foods and the food production process are!

Photos By: Pixabay

Because of this, many people refuse to eat anything that is not organically and sustainably sourced. Organic food is cultivated in a very natural manner; it is food that is free from carcinogenic toxins and chemicals and is food that is free from poisons. It is much healthier, safer, and better for you.

And, what better to pair your organic food with than a glass of the finest wine? Organic food is the height of luxury and is very expensive – it offers a superior taste to non-organic food and can help you to lead a very healthy lifestyle. Equally, wine can be good for you and is the height of luxury, too. Wine has been consumed since the days of ancient Greece and can, too, be organic. Enhance your organic dining experience with the perfect wine pairing. For a touch of creativity, explore a free menu design for your organic feast presentation!

Sourcing Organic Produce

Before moving onto the more important aspect of the article, and the main body of text, we must first discuss how you source your organic food – organic food, just because it bears the word ‘organic’ does not always mean it is free from chemicals. Many unscrupulous so-called organic growers do not use chemicals in the growing process, but after they are grown, load the food with harmful chemicals and preservatives. However, some countries have strict regulations on this, such as Australia and a few European countries. Research the producer before you purchase the food, as you may find you are not eating truly organic food.

Meal Ideas

Moving on, there are many different menu ideas you can choose from. Australia is at the forefront of the organic revolution – with many of its retailers and stores refusing to sell anything but, and its organic farms supplying the entire world with organic produce. Many organic food producers offer their own menu guides, like many of the new Cleaver’s stockists in South Australia and many other organic food retailers. Whether or not you will like the meal suggestions is, of course, subjective to your own personal tastes. If you are going to be pairing organic food with wine, then it is always a good idea to ‘go Mediterranean’ as it were. Mediterranean food has been paired with wine for thousands of years. There are rules, however, to what you can pair with what. Here are a few of them:

Wine Acidity

One of the most well-known rules when it comes to pairing wine with food is that your wine should be more acidic than your food. This can be difficult if you were eating something with a lot of lemons or citrus fruits – and to counteract this – you would need to research which wine would surpass your meal in acidity. If you are not more acidic than your food, it will not be as enjoyable as if it were.

Wine Sweetness

Equally, just as your wine should be more acidic than your food, it should also be sweeter than your food. This rule, and the previous one, are some of the most important rules when it comes to wine and food combinations. You must always ensure your wine is sweeter than your food – but when your food is organic and naturally sweet and juicy – that may be difficult!

Flavour Intensity

Your wine should have an equal amount of flavour intensity as the food that you are eating. This is a rule you must always uphold. If one is of lesser flavour intensity, you will not be able to truly enjoy your meal, nor the combination of wine and organic produce.

Reds and Whites

It is well-known amongst wine aficionados that red wine pairs best with boldly flavoured meats, such as steaks, lamb, or veal—equally, white wine pairs best with light meats, such as fish, chicken, or turkey. You can try breaking this centuries-old tradition, but you may discover it still stands for a reason.

Sauce

When you are cooking with wine in a sauce, it’s always good to match the wine that you are going to be drinking with the wine that will be in your sauce. You should also, even if your sauce is free of wine, find a wine that matches the sauce of your meal. Pairing sauce and wine can be difficult, but when the right balance is found, it creates a harmonious and delicious unification that will impress friends, family, or dinner guests. Always give this consideration when you are pairing wine and food.

With the help of this page, you know a few rules for pairing wine and food and how to source and come up with meal plans for your organic food. Drink in moderation, always. Remember, too, that organic food can massively improve your life – there is nothing better to eat.

Easy Ways to Cook Healthy Food

Cooking food at home is definitely the way to go if you truly want to be as healthy as you can be, here are some easy ideas that will make this process a breeze!

If you regularly eat food from restaurants, you will find it very difficult to lead a healthy and sustainable lifestyle in any meaningful way. Part of this has to do with the fast cooking methods that are used, methods that imbibe your food with highly damaging elements that will be a serious burden on your health. Cooking food at home is definitely the way to go if you truly want to be as healthy as you can be, and there are tons of easy recipes like simple low calorie tuna salad, chicken wraps, and more! Almost 90% of people you see around you do visit the gym a couple times in the week just to keep fit; but some of these people do visit the gym consecutively for the whole week just to keep fit and exercise of course. BUT – it’s not enough if you don’t eat a healthy diet either.

These are some ways in which you can make the food you cook at home a bit healthier for everyone that might be eating it as well as becoming a better home cook the easy way!

Make Low Fat Sauces

Cooking healthy food does not necessarily mean that you will have to eat bland offerings regularly, you just need to cut down on the aspects of your meals that are contributing the most to the fact that they are truly unhealthy. For example, you don’t have to stop eating pasta. Indeed, pasta can be a delicious meal that can leave you feeling nice and full therefore preventing mid meal snacking which can be a huge cause of unintentional and often uncontrollable weight loss. It’s not the pasta itself which is bad for you, it is the other things you add to it.

Sauces are a great way to flavor your foods and they add a delicious element to your meals that would make you truly enjoy them. That being said, if your sauces are full of cream, cheese and butter, they won’t be very food for you. Using the pasta example once again, making a light tomato based sauce would be a much better idea. You would get a delicious meal without any of the unhealthy ingredients that are full of saturated fat.

Change Your Cooking Style

Chicken in and of itself is not an unhealthy food. Indeed, it can be a perfectly healthy way to fill up your stomach and give your body some much needed protein. However, deep fried chicken is definitely not good for you at all. So what is the difference here between the same pieces of meat, why is one healthy while the other is so terrible for you? A lot of this has to do with the manner in which the chicken has been cooked. Deep frying soaks the chicken in unhealthy fat which is why you should avoid it as much as possible.

However, if you were to grill your chicken, not only would it still be absolutely delicious but it wouldn’t be nearly as unhealthy as the alternative. Steaming is also a great way to cook your food without making it bad for you, although steamed chicken might not taste all that great. If you really want fried chicken, there are alternative frying methods that you can opt for instead of deep frying. Shallow frying is not exactly the best way to cook your food healthily but it is miles better than deep frying and often results in absolutely delicious chicken. If you want to avoid oil completely and still fry your food, air frying is a great option that you can think about.

Use a Meal Prep Service

One of the most difficult aspects of eating in a truly healthy manner has to do with the fact that you might not know exactly what you want to cook on any given day. Making choices like this can be so hard that you might retreat to the same old comfortable options you are used to, options that are not exactly well known for being healthful in any serious way. You can opt for a healthy meal prep delivery service to help yourself out in this regard. These meal prep services will give you all the ingredients you need for your meal along with a recipe that will tell you how to cook your meal. This is certainly going to make the cooking process far easier than it would have been otherwise, and will give you a plan that you can follow in your quest to eat healthier food.

Creative Tortilla and Wrap Recipes

Looking for a quick lunch fix? These tortilla wrap recipes make it easy to have a healthy and easy lunch!

Tortillas are some of the most versatile types of wraps ever to have been invented by humankind, and that’s because they can be filled with most anything and they put up with quite a bit of abuse. Depending on their size and the way they are cooked, they can hold heaps of ingredients without breaking.

But many people tend to think of tortillas as a not particularly convenient type of food. In actuality, you can make anything you like with them. Best of all, you can even make the wraps at home and therefore use any healthy ingredients. In this way, you can also know for sure that what goes in your mouth is free of preservatives or artificial colors.

You can make tortillas either using a regular pan or one of the many electric tortilla presses available out there. It’s your choice.

Below you’ll find a list of some of the most creative tortilla recipes available today. Maybe they’ll give you a sense as to what this type of food can truly offer. Some of these suggestions are easy to make and take little to nothing in the way of the minutes you’ll spend in the kitchen. Moreover, you’ll even be able to take your food to work and enjoy a healthy meal instead of gobbling a fast-food meal when you’re in a hurry and on your lunch break.

Breakfast Roll-ups

You’ll only need peanut butter or Nutella and one or two bananas for this recipe. Slather some nut butter on the tortilla, place the banana in the center, and then roll everything up. Slice it into bite-size pieces, and you’re all ready to go.

Tortilla Hot Dog Wraps

There are two main ways of making this meal. You can either use an unfried tortilla to wrap a hot dog and a piece of meltable cheese, place everything in a pan and pop it in the oven for several minutes, or you can fry the tortilla and then roll everything else up in it. If you have an excess of tortillas (or hot dogs), this treat can be great once in a while with ketchup or mustard.

Chicken Fajitas

Everyone loves a fajita now and then. You can use chicken or seitan if you’re a vegetarian or vegan. You just have to grill the meat (or faux meat, depending on what you want to use), add steamed or grilled veggies, a little cilantro and a bit of guacamole, and you’ve got yourself a hearty and satisfying dish.

Fancy Brie and Pear Quesadillas

French cheese and tortillas don’t seem to get along, at least not at first sight, right? Actually, a tortilla is just like any other kind of wrap, so it works with any kind of ingredient you personally prefer. Slice some pears thinly and add generous chunks of brie to the tortillas. Place everything in the oven until the cheese starts to melt and you’re all set. If you like your pears cooked, you can saute them in a pan before putting everything in the oven.
