Easy Wheat Germ Cherry Muffins – Old Original Recipe!

These wheat germ muffins really bring back childhood memories. I finally found the original recipe from an old recipe book. Take a look!

Wheat germ muffins are one thing my grandmother always used to make and bring back tons of childhood memories when food used to be made of simple, and real ingredients. It’s hard finding recipes that use original and traditional ingredients instead of being packed with sugar, sweeteners and cheap flour. I finally managed to find this recipe in an old cook book of my mothers. These cherry wheat germ muffins are super easy to make and taste delicious. 

You can follow the recipe below and add a cup or two of cherries, however much you like. You can also add raisins instead or even try with blueberries. This version isn’t loaded with refined sugars, instead it includes honey which is a fantastic healthy alternative to sugar. I like to call it edible liquid gold since it’s full of anti-bacterial properties that help fight cancer, increase athletic performance, and can actually fight off colds.

Healthy Carrot Cake Cupcakes with Chocolate Glaze

 

Ingredients:

To Make Cupcakes

  1. 1.5 cups whole wheat flour
  2. 1.5 tsp baking powder
  3. ½ tbsp. cinnamon
  4. ½ tsp baking soda
  5. 1 tsp vanilla extract
  6. Pinch of salt
  7. ½ tsp nutmeg
  8. ½ cup raisins
  9. 1 cup plain yogurt
  10. 2 cups grated carrots
  11. 1.2 cup honey
  12. 2 eggs at room temp
  13. 1/3 cup coconut oil (or you can use plain vegetable oil)

To Make Chocolate Glaze

  1. A few squares of baking chocolate
  2. Little bit of vegetable oil

Instructions:

  1.  Preheat oven to 430 F and line cupcake pan with cupcake cups. In a large bowl, combine the dry ingredients: flour, baking powder, baking soda, pinch of salt, cinnamon, and nutmeg.
  2.  Peel and grate carrots and then in a separate small bowl toss raisins with 1 tsp of flour. Combine carrots and raisins to dry flour mixture from step 1.
  3. In a separate bowl, combine oil, honey, and then beat in eggs, yogurt, and vanilla extract. Combine with carrot and flour mixture and mix well until everything is incorporated. Pour batter evenly into cupcake cups and bake for about 15 minutes or until a toothpick inserted in the center comes out clean.
  4. Remove cupcakes from oven and transfer to a wire rack to cool completely. To make chocolate glaze, melt a few squares of baking chocolate with a little bit of vegetable oil in a saucepan. Pour over cupcakes and voila!

If you grow your own blueberries like I do, these muffins taste even better with freshly picked berries. Or you can make them with store-bought frozen blueberries, which work just as good. These muffins freeze quite well, so even if you can’t eat a whole batch, just throw them into the freezer in a sealed zip lock bag or airtight container and take them out the night before for a quick home-baked breakfast!

The Best Homemade Blueberry Cake Muffins

 
Yields 18
Soft and light blueberry muffins with a cake-like consistency… so addictive!
 
Ingredients:
 
  1. ½ cup unsalted butter, softened
  2. ½ cup sugar
  3. 2 large eggs
  4. 1 tsp vanilla extract
  5. 2 tsp baking powder
  6. ½ tsp sea salt
  7. 2 cups all-purpose white flour
  8. ½ cup milk
  9. 2 ½ cups fresh or frozen blueberries
Instructions:
 
  1. Preheat oven to 375F place muffin cups in muffin pan.
  2. In a large mixing bowl using an electric mixer on medium, mix butter until creamy. Gradually add in sugar until light and fluffy.
  3. Slowly add in eggs, beating after each addition until well combined. Then, beat in vanilla, baking powder, and salt.
  4. Mix in half of flour, half of milk, and repeat. Fold in fresh or frozen blueberries.
  5. Scoop muffin batter into muffin cups using a spoon. Bake for 20 minutes until golden.

Loaded with Sprinkles! Pink Funfetti Cupcakes with Vanilla Buttercream Icing

 
Ingredients:
 
For Cupcakes
 
  1. 1.5 cups all-purpose flour
  2. 1 tsp baking powder
  3. ¼ tsp baking soda
  4. ½ cup unsalted butter, melted
  5. 1/2 cup granulated sugar
  6. pinch of salt
  7. 1 large egg
  8. ¼ cup of plain yogurt
  9. ¾ cup milk
  10. 2 tsp vanilla extract or vanilla sugar
  11. ½ cup of sprinkles
For Icing
 
  1. Two drops of red food coloring
  2. 12 ounces of unsalted butter, softened
  3. 2 cups of powdered sugar
  4. ½ tsp vanilla extract
Instruction:
 
To Make Cupcakes
 
  1. Line cupcake pan with cupcake liners and preheat oven to 350F. In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together butter and sugar. Slowly add in the egg, yogurt, milk, and vanilla and mix until incorporated. Add the dry ingredients to the wet ingredients and mix until smooth and combined. Then mix in the sprinkles.
  3. Fill cupcake liners with batter and bake for about 20 minutes, or until an inserted toothpick comes out clean.
To Make Icing
 
  1. In a mixing bowl using an electric mixer on high, beat butter until light and creamy. Gradually add in sugar, continuously beating on medium until combined. Mix in vanilla extract and two drops of red food coloring.
  2. Using a piping tube, pipe frosting onto completely cooled cupcakes. Add sugar pearls on top of the icing to garnish!

Cake Mix Ice Cream Cone Cupcakes

Ice cream cones filled with cake mix batter and topped with frosting and fresh fruit!
 
Ingredients:
 
  1. 1 box vanilla cake mix
  2. Water, oil, and eggs needed to make cake mix
  3. 24 ice cream cones with a flat bottom
  4. 2 containers of frosting (flavour of your choice!)
Instructions:
 
  1. Preheat your oven to 350F and mix up your cake mix, following the instructions on the box. Fill up your cupcake pan with your cupcake cups and pour the batter evenly into the cups, a little less than half full. Take your ice cream cones and place them upside down onto the bater in each cup.
  2. Bake for about 15-23 minutes, remove from oven and let it cool for half hour. Remove baking cups, pipe on frosting and decorate with fresh fruit!

Chocolate Chip Banana Cupcakes with Cream Cheese Frosting

Ingredients:
 
For Cupcakes
 
  1. Dry Ingredients
  2. 1 ¾ cup flour
  3. 1 cup sugar
  4. 1 tbsp baking powder
  5. ½ tsp salt
  6. 2 tsp vanilla extract or 1 packet vanilla sugar
  7. Wet Ingredients
  8. ½ cup Crisco shortening
  9. 1/3 cup evaporated milk
  10. 2 medium sized ripe bananas, mashed
  11. 2 large eggs
  12. 1 cup chocolate chips
For Cream Cheese Frosting
 
  1. 8 oz (225g) of cream cheese
  2. ½ tsp vanilla extract
  3. ½ cup powdered sugar
  4. 2/3 cup heavy cream, chilled

Instructions:

To Make Cupcakes
 
  1. Set oven to 375F and line cupcake pan with cupcake cups. In a large mixing bowl using an electric mixer, mix together all the dry ingridients. Slowly mix in the wet ingredients one at a time and then mix in the chocolate chips last with a wooden spoon.
  2. Fill cupcake cups with batter and bake for about 20 minutes or until toothpick comes out clean. Remove from oven and allow to cool for 10 minutes. Transfer to a cooling rack until completely cooled.
To Make Frosting
 
  1. In a large mixing bowl using an electric mixer, beat the cream cheese until smooth. Slowly add in the powdered sugar, vanilla extract, and then the heavy cream until super thick. Pipe frosting onto cooled cupcakes and serve! To store, place cupcakes in airtight containers.
