Chocolate Chip Orange Cookies Recipe

Chocolate and orange all in one cookie sounds like a happily married combination! These chocolate chip orange cookies are infused with fresh orange juice and orange zest mixed with delicious dark chocolate and vanilla aroma… can you really ask for more in a cookie?

Last weekend, I tried to come up with something different other than my weekend staple chocolate oatmeal cookies. I wanted something fruity, but also infused with chocolate since everyone LOVES chocolate! After coming back from my local Lidl with a whole bucket of fresh oranges, I started to feel a little guilty while throwing away the juicy peels. That really got me onto something – orange zest! Why waste orange peels and why not add orange zest into chocolate chip cookies?

These cookies are loaded with orange zest and freshly squeezed orange juice. They taste like a chocolate chip cookie but even BETTER. Making orange one of the main ingredients is an ingenious way to add a little kick to your recipes. I’ll definitely consider this for future cookies and even cakes or creams I will be making… stay tuned. 🙂

Chocolate Oatmeal Banana Bread – Eggless, Milk and Sugar Free!

chocolate oatmeal banana bread recipe no eggs dairy free no milk easy oatmeal chocolate chips cinnamon easy healthy no sugar low calorie low cal diet friendly

Eat up this delicious banana bread thats totally eggless, milk-free, and sugar free! I’ve yet to meet a soul that doesn’t like this banana bread, it’s been a signature treat of mine for years and never disappoints. What I love about this bread is that it’s guilt free and super filling. Whole wheat flour (or all purpose flour depending on your preference) and oatmeal provide you with loads of fibre and energy, making it the perfect breakfast or snack option. It’s also great for those on a diet that are looking for a filling, low-fat dessert.

The bread is also very moist and dense, so it doesn’t dry up and can hold at room temperature for quite a while (although because of it’s deliciousness I don’t think it will last very long!). The secret to it’s moist-ness is the yogurt as well as the creamy bananas – make sure to use ripe bananas, the riper the better!

I personally love this bread once it’s cooled down, but you can definitely eat it straight out of the oven or even warm it up in the microwave. Now who can resist melted, gooey chocolate?

Bajadera Recipe

Yields 16
An easy no-bake, and traditional Croatian holiday dessert recipe. These bite sized treats are addictive for chocolate lovers!

Ingredients:

Dough

  1. 1/2 cup of water
  2. 1 cup of sugar
  3. 1/2 lb of crushed plain tea biscuits
  4. 1/2 lb of walnut, almond or hazelnut meal (or blend)
  5. 2 sticks of butter (16 tablespoons)
  6. 3 oz. of dark chocolate
  7. any alcohol (for flavor)
Icing

  1. 2 tablespoons of milk
  2. 2 tablespoons of powdered sugar
  3. 3 tablespoons of butter
  4. 3 oz. of dark chocolate
Instructions:

  1. Bring water to a boil in a large saucepan then add the sugar. Stir. Wait until the sugar is completely dissolved (about 3-5 minutes) then add the crushed biscuits, nut powder(s) and butter in small pieces. Mix well until homogeneous.
  2. Meanwhile, melt the chocolate in a bain-marie (double boiler).
  3. Take saucepan off the heat, then add alcohol to the batter and mix.
  4. Divide dough into 2 equal parts. In one of them, add the melted chocolate, and incorporate.
  5. Place a square baking frame (approximately 8×8 in) on a plate (or you can also use a square pan) and line with parchment paper.
  6. When the dough is warm, spread half of the chocolate batter at the bottom of the frame (or pan). Pack well to form a very uniform and dense layer. Reproduce the process with the plain dough, then the remaining half of chocolate batter, making sure to smooth the surface at the end of each step.
  7. Prepare the icing. Start by simmering the milk, powdered sugar and butter. When everything is dissolved, add the chocolate and mix until you obtain a uniform glaze.
  8. Pour the icing, spreading it evenly and gently then tapping the plate on the work surface to level the surface and get rid of any air bubbles.
  9. Refrigerate at least 4 hours (preferably overnight).
  10. Using a large sharp knife, cut strips about 1×3 in.
