Take a bite into the Mediterranean with this sweet and savory whole wheat rosemary bread! A crunchy crust and a soft inside make this bread a true winner. Rosemary is one of the hottest herbs in cooking and since a few bushes around my home I try to use it in all of my dishes. It’s native to the Mediterranean, and being an evergreen shrub, the bitter needle-like leaves are available fresh all year around.

Including rosemary in cooking or baking is easy and fun since it adds a unique kick to any dish. This whole-wheat rosemary bread makes fantastic spin to regular whole wheat bread, and one of the reasons why it tastes so delicious is because of it’s partner in crime – olive oil. Rosemary and olive oil is definitely a Mediterranean staple and must be paired together to put a seal on any Mediterranean dish. 

To get the most out of this whole wheat rosemary bread, eat it with grilled fish or even slather on some butter while it’s still warm!

Rosemary Bread with Whole Wheat Flour and Olive Oil

 
Ingredients:
 
  1. 1 cup warm water
  2. 1 tbsp granulated sugar
  3. 3 tsp dry yeast
  4. 1 tbsp flax seed
  5. 2 tbsp olive oil
  6. 1 1/2 cups whole wheat flour
  7. 1/2 cup all purpose flour
  8. 3 tbsp rosemary, chopped (if possible use fresh)
  9. pinch of salt
  10. pinch of garlic powder
  11. pinch of freshly ground black pepper
Instructions:
 
  1. In a mixing bowl, add warm water, sugar, and yeast. Let it sit for 10 minutes until bubbly and set aside.
  2. In a separate mixing bowl, combine flours, salt, garlic, chopped rosemary, and olive oil. Slowly add this mixture to the yeast mixture and knead until a ball shape is formed.
  3. Oil a clean bowl and place the ball of dough inside, covering with plastic wrap or a dishcloth. Place in a warm place to rise for 1 hour or until dough has doubled in size.
  4. Once the dough has risen, punch it down. Form dough into a round loaf shape and transfer to a flour dusted baking sheet. Cover dough with a dishcloth and let it rise again for 30-45 minutes.
  5. Set oven to 350 F and using a baking brush, brush loaf with olive oil. For decoration, place a few rosemary twigs in the center of the loaf and place in the oven to bake for about 25 minutes. The bread should be golden brown at the top. Remove from oven, allow to cool for 10 minutes before slicing.

Looking for a healthy low-calorie fall dessert? These walnut stuffed oven baked apples make the perfect treat for Halloween, Thanksgiving, Sunday brunch, or just about any time of the day or year! The recipe is easy to make and only requires a few simple ingredients you most likely already have in your pantry.

Not a fan of walnuts? You definitely should be! Walnuts are an excellent source of ant-inflammatory omega-3 essential fatty acids, rich in antioxidants and are a very good source of manganese and cooper. They are also the healthiest of nuts you can eat, and are very filling. I have to admit, after eating one of these apples I was definitely stuffed and satisfied!  
If you are on a vegan diet or lactose intolerant, you can easily substitute the milk with almond or soya milk. Having an adults-only party? Spike these apples with rum or Irish whiskey to get the party started!

Walnut Stuffed Oven Baked Apples

 
Serves 6
Oven baked apples stuffed with a mixture of walnuts, cinnamon, sugar and raisins!
 
Ingredients:
 
  1. 6 medium sized apples, tops cut off and generously cored
  2. 200g ground walnuts
  3. 1 1/2 tsp cinnamon
  4. 2 tbsp granulated white sugar or brown sugar
  5. 1 tbsp rum or Irish whiskey (optional)
  6. 1 tsp vanilla extract
  7. 1/2 cup milk
  8. ¼ cup rum soaked raisins (optional)
Instructions:
 
  1. Preheat oven to 300F (150C). Mix together walnuts, cinnamon, sugar, rum, and vanilla extract (raisins are optional).
  2. Bring milk to a boil and pour over walnut mixture and mix into a paste. If the paste appears watery, let it sit for a few minutes until thickened. Allow to cool for 15 minutes and then spoon paste into apples until filled to the top. Place apple top back on.
  3. Carefully transfer apples to a baking sheet (no need to grease it) and bake for 1.5 hours until apples are softened and cooked through (you should be able to easily poke a toothpick all the way through the apple). Remove from oven and allow to cool for 10 minutes. Enjoy!

Hummingbird Cake Recipe with Cream Cheese Frosting

A lovely way to start of the spring and summer season with a multi-layered hummingbird cake filled with cream cheese frosting! Moist pineapple, crunchy pecans or walnuts and loads of flavor!

Hummingbird Cake Recipe with Cream Cheese Frosting

 
Ingredients:
 
  1. 3 cups flour
  2. 1 cup sugar
  3. 1 tsp table salt
  4. 1 tsp cinnamon
  5. 1 tsp baking powder
  6. 1 tsp baking soda
  7. ¼ tsp allspice
  8. 1 1/3 cups vegetable oil
  9. 2 tsp vanilla extract or vanilla sugar
  10. 3 eggs (lightly whipped)
  11. 1 ½ cups mashed bananas
  12. 2 cups toasted pecans or walnuts (chopped and divided)
  13. 1 can crushed, undrained pineapple (about 1 oz can)
  14. 1 cup butter, softened
  15. 2 tsp vanilla extract
  16. 1 tsp salt
  17. 2 packages of cream cheese (8 oz each package), chopped in chunks
Directions:
 
To Make Cake
 
  1. Preheat oven to 350 F and grease/flour three 9” cake pans.
  2. Mix dry ingredients first in a large bowl: flour, 2 cups sugar, salt, baking powder, baking soda, cinnamon, and allspice.
  3. Add wet ingredients to dry ingredients and mix well: vegetable oil, vanilla extract, and eggs. Add banana, 1 cup of pecans or walnuts, and pineapple until combined.
  4. Divide batter between the 3 pans and bake for about 25 minutes. Let cakes cool before removing to wire racks.
To Make Frosting
 
  1. Beat butter and powdered sugar together using an electric mixer. Add the vanilla extract and then start to combine the cream cheese, 1 chunk at a time.
  2. Spread the frosting evenly between all the layers, as well as the top and sides of the cake. Sprinkle chopped and toasted pecans/walnuts all over cake.

Strawberry sprinkles pancakes are something your kids will LOVE to look forward to in the morning – so whip up a quick batch before heading off to sleep and drop them in the pan the next morning. We will be honest with you – there is no easier way to get them up for school in the morning! 

Strawberry Sprinkle Funfetti Pancakes

 
Yields 6
Add some color to your day with these funfetti strawberry pancakes!
 
Ingredients:
 
  • 1 cup all purpose flour
  • 2 tbsp granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp kosher salt
  • 1 cup of whole milk
  • 1 egg
  • ½ tsp vanilla extract
  • 2 tbsp butter, melted
  • 5-6 medium-sized strawberries, sliced
  • sprinkles of your choice
Instructions:
 
  • In a small bowl, mix together milk, egg, and vanilla extract. In a separate bowl, mix together flour, sugar, baking powder, and salt.
  • Make a well in the flour mixture and pour in the milk mixture, mixing well and then adding in the melted butter and stirring until combined.
  • Heat a sauté pan over medium-low heat and butter or spray it with cooking spray. Once hot, scoop ½ cup of batter into the pan. Immediately lay 3-4 strawberry slices on each pancake, gently pressing each one in. Sprinkle with sprinkles and let it cook for about 2 mins or until golden brown, flip to the other side and cook for another 1-2 mins.
  • To serve, place strawberry side up and sprinkle with confectioners sugar, or whipping cream and more sprinkles if desired.
