How to Make a Delicious Lemon Pie

Instructions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Blind-bake your pie crust for 10-12 minutes until golden brown. Set aside to cool.

In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the water and lemon juice until smooth.

Step 4

Cook the mixture over medium heat, whisking constantly, until it thickens and comes to a boil. Boil for 1 minute, then remove from heat.

Step 5

In a small bowl, beat the egg yolks. Gradually whisk in about 1 cup of the hot lemon mixture to temper the eggs.

Step 6

Pour the egg mixture back into the saucepan and cook over low heat, whisking constantly, for 2-3 minutes, until thickened.

Step 7

Remove the saucepan from heat and stir in the butter and lemon zest until the butter is melted and the mixture is smooth.

Step 8

Pour the lemon filling into the cooled pie crust and smooth the top with a spatula.

Step 9

Bake the pie for 12-15 minutes until the filling is set.

Step 10

Cool the pie on a wire rack, then refrigerate for at least 2 hours before serving.

Nowadays it’s so hard to find recipes that aren’t full of sugar and taste like the old, original recipes our grandmothers used to make! I quickly fell in love with this simple yet very tasty apple pie recipe my mother sent over to me. This apple pie is not only very flavourful, it also holds it shape well thanks to the Granny Smith apples, which are a baker’s favorite when it comes to making apple pies. If you are about to make an apple pie, consider taking the time to find specifically Granny Smith apples, as they are known to hold their shape better and not turn watery or soggy. 

Apple pie is an American staple and favorite, but who knew it originates back to year 1381 in the midst of the middle ages in England? There are multiple what they would call “cookery books” and documents that outline a very similar apple pie recipe that we make today. This early recipe used a standard pie crust, slices of soft apples with their skin and seeds removed, and mixed with several spices like ginger, cinnamon, nutmeg, clove, and powdered sugar. It was then topped with butter or lard and saffron was used to color the pie filling. There are also versions that mixed in not only apples but also figs, raisins, and pears. 

Today’s recipe is strikingly similar except that we love to serve it with whipped cream, ice cream, or some (although I’ve never tried this) pair it will cheddar cheese! You can make your apple pie using standard tin pie plates which are great for travelling or if you are gifting your pies, or you can use a stoneware pie dish which I normally use at home.

Homemade Granny Smith Apple Pie Recipe

 
Ingredients:
 
Pie Crust
 
  1. 2 2/3 cups flour
  2. 1 cup shortening
  3. 1/2 cups cold water with 2 tsp apple cider vinegar
  4. Pinch of salt
Granny Smith Apple Pie Filling
 
  1. 6 cups Granny Smith Apples Sliced and Peeled
  2. 1 cup brown sugar
  3. 2 tbsp flour
  4. Pinch of salt
  5. 1 tbsp lemon juice
  6. 1/2 tsp cinnamon
  7. 1/4 teaspoon nutmeg
  8. 1 tbsp unsalted butter cut into small chunks
Instructions:
 
To Make the Pie Crust
 
  1. In a mixing bowl, whisk together the dry ingredients: flour and salt. Mix in the shortening and add the ½ cup of water. Continue mixing with your hands and add more water if necessary. Mix until you have formed a ball of dough. Divide the dough into two balls.
  2. Using a floured work surface and a rolling pin, roll out one ball of dough. Make your circle of rolled out dough at least 5 cm wider than your pie plate. Place the dough in your pie plate making sure the edges align with the pie plate rim. Next, make the pie filling.
To Make the Pie Filling
 
  1. Get your oven warmed up and preheat it at 425 F. In a mixing bowl, mix apples, brown sugar, flour, lemon juice, cinnamon, salt, and nutmeg. Mix until the apples are well covered in the flour, sugar and spices. Transfer the apple pie filling into your apple pie plate. Sprinkle the butter chunks over the apples.
  2. Roll out the second ball of dough and place it over the apple pie filling that is in the pie plate. Using your fingers, pinch the edges of the apple pie crust to seal it with the piecrust below. Using a knife cut a circle into the middle of the apple pie crust.
  3. Optional: Use a pastry-brush to brush milk over the whole apple pie and sprinkle with sugar.
  4. Bake for about 15 minutes, then remove from oven and cover with tin-foil and return to oven to bake for another 25-30 minutes.

This homemade apple strudel recipe is as easy as it gets, but it tastes so rich and full of flavour you’ll be addicted after your first bite! The store bought phyllo dough helps to make it a quick dessert that takes minutes to make. Just mix up the ingredients, spread them onto the dough sheets and roll em’ up. It’s that easy. What made me fall in love this is really basic recipe (only 6 ingredients!) is that it tastes so juicy and full of flavour. This strudel is not dry and flakey like those you have tasted in the past. It is moist, rich, and jam-packed with nutritious apples. I know you will love it! 

Fast and Easy Apple Strudel Recipe

Fast and easy homemade apple strudel. So moist and jam-packed with lovely apples!

Ingredients:
 
  1. 500g package of phyllo dough
  2. Oil for oiling phyllo dough
For Filling
 
  1. 1 large egg
  2. 8 apples, peeled and grated
  3. 200 ml of sugar
  4. 1 tbsp ground cinnamon
  5. 2 tsp vanilla extract or 1 package of vanilla sugar
  6. 2 tsp baking powder
Instructions:
 
  1. Preheat oven to 200 C or 392 F. Mix all filling ingredients together in a large bowl. Using a pastry brush, evenly oil pastry sheets and stack three on top of eachother. On the third one spread an even amount of filling and roll up. Keep repeating until you have used up all the filling and pastry sheets.
  2. In a well oiled pan, arrange the strudel in a swirl and bake for 25-30 minutes.

Granny’s Mini Pecan Pie Tarts

Ingredients:
 
For Pie Tarts
 
  1. 2 (3-ounce) packages cream cheese, softened
  2. 2/3 cup unsalted butter, softened
  3. 2 cups all-purpose flour
  4. 1/2 teaspoon salt
  5. 1 cup chopped pecans
For Filling
 
  1. 3 large eggs, beaten
  2. 1 cup firmly packed dark brown sugar
  3. 3/4 cup light corn syrup
  4. 2 tbsp butter, melted
  5. 1 teaspoon vanilla extract

Instructions:

To Make Pie Tarts
 
  1. In a medium bowl, beat together cream cheese and 2/3 cup butter at medium speed. Beat in flour and salt until combined and divide the dough in half. Flatten each half into a circle about 1 inch thick, wrap in plastic wrap and let it chill for 1 hour.
  2. Shape dough into 2-inch balls and flatten them. Place each into in 3-inch muffin cups, forming each into a shell and letting it form a lip above the cups. You can use a fork to press into the edges to make little decorative lines. Sprinkle pecans evenly in pastry cups.
To Make Filling
 
  1. Whisk together eggs, brown sugar, corn syrup, butter, vanilla extract and salt until blended.
  2. Pour mixture evenly over pecans until pastries are full. Bake at 350F for 30-35 minutes or until set.

Love ice cream on a hot summer day? This chocolate Oreo cookie pecan mud pie is infused with flavour and dripping with yumminess. With a hint of coffee ice cream and garnished with whipping cream and even MORE Oreos and pecans, it’s really a delicious treat the whole family would love. It also makes a cool frozen dessert that’s so simple to make, it doesn’t even require much baking!  

Chocolate Cookie Pecan Mud Pie

 

Ingredients:

  1. 13 Oreo cookies, crumbled
  2. 3 tbsp unsalted buter, melted
  3. 1 egg white, lightly beaten
  4. 1-1/4 cups pecans, chopped and toasted
  5. 1/4 cup sugar
  6. 2 cups coffee ice cream
  7. 2 cups chocolate ice cream
  8. 13 Oreo cookies, chopped and divided (leave some for decorating the top!)
  9. Frozen whipping cream for decorating
Instructions:
 
  1. Preheat oven to 350 F. In a large bowl, mix together Oreos and butter and press into a 9″ pie plate. Brush the top of the Oreos with the egg white and place in the oven for about 5 minutes.
  2. Combine both ice creams and 1 cup of chopped Oreos and 1 cup of pecans. Dump mixture into crust and freeze for 10-15 minutes. Using the remaining cookies and pecans, sprinkle onto top of pie and press (Leave a bit to decorate the top!). Freeze pie for at least 7-10 hours.
  3. To decorate, swirl whipping cream over the whole pie and sprinkle chopped Oreos and pecans.
Notes
 
  1. To toast pecans, place in the oven on a cookie sheet for about 10 minutes.
